Cheese tortellini is perfect for using in so many dishes like soups, pasta salads, and baked pastas.
This Spinach Tortellini Soup Recipe is a hearty soup that will warm up any chilly night. Like most soups it can be prepared ahead of time and refrigerated until ready to rewarm. Have a crowd to feed? Double or triple the recipe below and serve with a big salad, and cornbread for the perfect meal for feeding a large group.
The Spinach Tortellini Soup Recipe below calls for using 4 cups of my Tomato Soup Recipe. It sure is a good way to use leftover Tomato Soup. In a pinch, canned tomato soup may be substituted in this recipe. If substituting canned soup, I would look for a basil tomato soup, or add in some dried basil, dried thyme and garlic powder for added flavor when preparing the recipe below.

Spinach Tortellini Soup Recipe
This easy and delicious Spinach Tortellini Soup Recipe is the perfect bowl of comfort for a chilly night.
Ingredients
- 4 cups Tomato Soup Recipe*
- 10 ounces cheese tortellini, cooked
- 2 cups baby spinach leaves
Instructions
- Warm the tomato soup over medium heat.
- Stir in the cheese tortellini and spinach leaves. Warm, stirring occasionally, until spinach wilts.
- Serve warm.
Notes
*If needed, a basic canned tomato soup may be substituted. Add dried basil, dried thyme and garlic powder to taste. Store leftovers covered tightly in the refrigerator until ready to rewarm.
