Easy Vegetarian Chili Recipe

A bold and zesty vegetarian chili that is quick and easy to prepare.

Ingredients

  • 2 teaspoons oil
  • ½ cup white onion, diced
  • ½ cup red or green bell pepper, diced
  • 1 can (14.5 ounces) petite diced tomatoes
  • 3 cans (15.5 ounces) BUSH’S® Black Chili Beans, undrained
  • ½ teaspoon kosher salt
  • 1½ teaspoons ground cumin
  • 1½ teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 can (8.5 ounces) sweet golden corn, whole kernel, drained
  • optional: ¼ teaspoon chipotle chili pepper

Instructions

  1. In saucepan, cook onions and peppers in oil for 10-15 minutes over medium heat.
  2. Stir in remaining ingredients and bring to a boil. Reduce heat to medium-low or low and cover; simmer for 20 minutes stirring every few minutes.
  3. Serve with optional toppings, as desired.
  4. Optional Toppings: shredded Cheddar cheese, sour cream, fresh diced tomatoes, onions and peppers
