Easy Vegetarian Chili Recipe
A bold and zesty vegetarian chili that is quick and easy to prepare.
Ingredients
- 2 teaspoons oil
- ½ cup white onion, diced
- ½ cup red or green bell pepper, diced
- 1 can (14.5 ounces) petite diced tomatoes
- 3 cans (15.5 ounces) BUSH’S® Black Chili Beans, undrained
- ½ teaspoon kosher salt
- 1½ teaspoons ground cumin
- 1½ teaspoons chili powder
- 1 teaspoon garlic powder
- 1 can (8.5 ounces) sweet golden corn, whole kernel, drained
- optional: ¼ teaspoon chipotle chili pepper
Instructions
- In saucepan, cook onions and peppers in oil for 10-15 minutes over medium heat.
- Stir in remaining ingredients and bring to a boil. Reduce heat to medium-low or low and cover; simmer for 20 minutes stirring every few minutes.
- Serve with optional toppings, as desired.
- Optional Toppings: shredded Cheddar cheese, sour cream, fresh diced tomatoes, onions and peppers
