To prepare begin by warming broccoli and broth together in a saucepan. Bring to simmer and simmer for five minutes. While the broccoli and broth warm, in a separate large saucepan melt butter over medium heat. Whisk in flour, salt, pepper and allspice (or mace). Cook until bubbly and gradually stream in cream, stirring until smooth and slightly thickened. Remove from heat. Next carefully transfer the warmed broccoli and broth to a blender or food processor and puree until smooth. An immersion blender may be used as well. Stir the pureed broccoli and broth mixture into the cream sauce until smooth. Heat over medium-low until warmed through. If you wish, garnish the bisque with a dusting of paprika, sliced chives or crunchy croutons.

*If you own an immersion blender, it will work perfectly for pureeing the broccoli and broth for this bisque.

Ingredients

  • 14 ounces chicken broth
  • 20 ounces frozen chopped broccoli, thawed
  • 1 bay leaf
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups half and half
  • 1/4 teaspoon ground allspice or mace

Instructions

  1. In a saucepan, combine broth, broccoli and bay leaf over medium heat. Bring to a simmer; simmer for 5 minutes, stirring occasionally.
  2. Separately, in a large saucepan over medium heat, melt butter. Whisk in flour, salt, pepper and allspice (or mace). Cook until bubbly; gradually stream in cream, stirring until smooth and slightly thickened. Remove from heat.
  3. Remove bay leaf from broth and broccoli mixture. Carefully* transfer to a blender or food processor and puree until smooth. (An immersion blender may be used as well.) Stir broth/broccoli mixture into cream sauce until smooth. Heat over medium-low until warmed through.
  4. Optional: Garnish with a dusting of paprika and/or sliced chives. Serve warm with croutons.

Notes

*Be careful when blending hot liquids. Crack lid and cover (or replace lid totally) with a dish towel to avoid pressure building up.
