Every time this year, during strawberry season I remember my niece, Elizabeth, standing in the middle of a strawberry field, barely taller than the plants herself, her strawberry blond hair glowing in the warm sun with the crimson juice dripping from head to her little toes as she crams one more giant berry in her mouth. I hope I never forget that day strawberry picking with my sister and our children. It’s the simple things in life that are the very best.

A few basic ingredients meld together to create this scrumptious treat: fresh strawberries, cream, cinnamon, vanilla, sugar. Heavy cream is whipped up with cinnamon, vanilla and sugar, then folded together with fresh strawberries and spread in a baking dish, and finished with a with a generous sprinkling of sugar that is browned to a crispy shell. Pure bliss is what it is.

Strawberries and fresh whipped cream topped with a crispy golden shell.

Ingredients

  • 1 cup heavy cream
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste (or extract)
  • 1/4 cup superfine/caster sugar (or powdered sugar)
  • 2 pounds fresh ripe strawberries, hulled and sliced*
  • 1/3 cup coarse sugar (pure cane sugar or demerara works well)

Instructions

  1. Beat cream until stiff peaks form. Beat in cinnamon, vanilla bean paste (or extract) and superfine sugar.
  2. Preheat broiler to 500-degrees F.**
  3. Fold sliced strawberries into whipped cream and spread in wide baking dish. Evenly spread with granulated sugar.
  4. Place under broiler about 3-5 minutes until sugar is golden (unless using a kitchen torch, see notes). Be watchful as cook time will vary depending on oven. Crack oven door slightly if needed to avoid scorching.
  5. Serve right away.

Notes

*If time permits and more strawberries are on hand, roast 3 pounds of sliced strawberries in lieu of the 2 pounds listed in ingredients. Preheat oven to 400-degrees F. Spread sliced strawberries in a baking dish; roast for 15-20 minutes, stirring at least once. Be watchful to avoid scorching.

* Allow to cool completely before mixing with whipped cream.

**A kitchen torch may be used to brown sugar instead of a broiler. Use with care and quickly warm sugar uses quick back and forth strokes until bubbly and golden brown.

This dish does not do well made ahead of time. It should be served soon after preparation. The whipped cream can be prepared ahead and refrigerated, but do not combine with strawberries until closer to serving time as the strawberry juice will begin to break down the whipped cream.
