This baked chicken recipe is simple and quick to prepare and makes a tasty main dish for any meal.
Ingredients
- 3 1/2-4 pounds bone-in chicken pieces (use favorite pieces)
- 1 tablespoons olive oil
- 6 tablespoons fresh-squeezed orange juice
- 1/2 teaspoon ground ginger
- ½ teaspoon salt
- ½ teaspoon pepper
- orange slices
Instructions
- Preheat over 450-degrees F.
- Spread chicken pieces evenly in oven-safe skillet, dutch oven, or casserole.
- Whisk together oil, orange juice, ground ginger, salt and pepper.
- Pour over chicken; toss to coat.
- Lay an orange slice on top of each piece of chicken.
- Roast in preheated oven, uncovered for 30 minutes, or until chicken done.

I made this with skinless, boneless chicken breasts and it tasted good but was a little bland and the juices were thin. I kept the chicken warm and boiled down the juices until they thickened; better! I might increase the ginger next time, or use fresh.
