Spiced up a bit with curry powder and even more ginger (yay for ginger!), plus raisins and pistachios, this crunchy Spicy Ginger Carrot Salad is packed with flavor for a satisfying side dish perfect for any meal. Although this salad can totally stand alone as a light lunch too. The warm spicy flavor combination is an excellent partner for ham, deviled eggs and potato salad for a springtime picnic or holiday meal. I don’t know about you, but this bunny is ready!
Spicy Ginger Carrot Salad is such a quick and easy side dish to prepare. Begin by whisking together a bit of sour cream, mayonnaise, vinegar, salt, ginger, and red pepper until smooth. Next stir in grated carrot, raisins (I like golden raisins for this recipe) and pistachios. Mix until combined and that’s it! So easy.
This salad can be made a couple of days ahead of time, then kept covered and refrigerated while all the flavors mingle. I think it’s even better after a day. The level of spice isn’t over the top, but you can easily adjust the spice to your preference. Raisins and roasted pistachios round out the texture in this salad. I used golden raisins but dark raisins just fine too. Good substitutions for the roasted pistachios would be toasted or roasted walnuts, pecans, or peanuts. Enjoy!

Spicy Ginger Carrot Salad

Ingredients
- 1/2 cup sour cream
- 1/4 cup mayonnaise (may substitute more sour cream if needed)
- 1 tablespoon rice vinegar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ginger
- 1/4 teaspoon curry powder
- 1/4 teaspoon ground red pepper
- 4 cups grated carrots
- 1 cup raisins (dark or golden)
- 1/2 cup roughly chopped roasted pistachios (substitute walnuts, pecans or roasted peanuts)
Instructions
- In a large mixing bowl, whisk together sour cream, mayonnaise, vinegar, salt, ginger, and red pepper until smooth.
- Add the grated carrot, raisins and pistachios; mix until combined.
- Cover and refrigerate until ready to serve.
