I’m not sure what Mother Goose was thinking or who Peter Piper was anyways. In the first place you can’t pick a peck of pickled anything, so that’s why they couldn’t find them. Hello, Mother Goose! Things are pickled after they are picked. Secondly, I think if anyone dug deeper into this Peter Piper they may have found out that he really liked picking cucumbers (which can also be pickled … into … pickles), because who doesn’t like cucumbers? And if you’ve ever grown cucumbers you know how a peck isn’t hard to pick. But of course “cucumbers” doesn’t really go with the whole alliteration thing Mother Goose had going on.

Onion Cucumber Salad Recipe
A light and tasty side dish made with fresh cucumbers and red onion.
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried dill
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 medium cucumbers, thinly sliced (about 6 cups sliced)
- 1 medium red onion, thinly sliced (sweet onion may be substituted)
Instructions
- Whisk together olive oil, red wine vinegar, lemon juice, dill, salt and pepper.
- Add sliced cucumbers and onion to a large bowl and toss with dressing. If needed, add additional salt and pepper to taste. Cover refrigerated until ready to serve.

Oh I love Peter Piper picked a peck of pickled peppers….beautiful salad. And now if I could just harvest a cucumber in my reluctant garden….
I love pickled cucumbers and onions, these were a staple in my home growing up. My Mom and Grandma made them up in reused 5 Gal ice cream buckets at the start of summer and just kept adding to them as long as the cucumbers were plentiful.
I’ve added a little twist to them instead of purple onion I use a sweet yellow onion and I add grape tomatoes sliced in half when I’m making a small batch, just enough for dinner.
If you like them spicy you can add a pinch of red pepper flakes as well.
I’ve always added a half teaspoon of sugar, and the best thing about this is that the longer it keeps in the fridge, the better the flavor gets…. YUM!
