Ingredients
- 1 teaspoon orange zest
- 2/3 cup fresh orange juice
- 2 tablespoons red wine vinegar
- 1/3 cup olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt, plus more to taste
- 1/2 teaspoon ground black pepper, plus more to taste
- 3 garlic cloves grated/minced garlic
- 10 cups thinly chopped kale leaves (about 1 large bunch with stems removed)
- 1 cup toasted sliced almonds
- 1 1/2 cups shredded carrots
Instructions
- In a large bowl whisk together orange zest, orange juice, red wine vinegar, olive oil, dried thyme, ground ginger, salt, pepper, and grated garlic until blended. Add remaining ingredients and toss to coat. Salt and pepper to taste.

How long does the kale stay fresh with the dressing on it? I pack my lunch daily, so I’m thinking this will be a delicious and healthy option for lunch.
The last time I made a huge batch we ate off of it for 3 days. The kale does soften a bit but it’s not mushy. Another option is to make the dressing separately then add a little dressing at a time as needed.
I made this for dinner tonight and it was delicious. So light and tasty with a nice balance of sweet and tangy. I added mandarin oranges which added to taste and presentation.
