A local sandwich shop serves a cucumber dill salad that I just crave. I always feel like I’m choosing a healthy side when I order it. It is mostly cucumber after all. In an attempt to recreate it at home, I gave them a call to see what the creamy base was made out of it, hopeful that it was something healthy. The sweet lady told me that it was cole slaw dressing. Mayonnaise. Durn. Not that I don’t like mayonnaise. I do. I like it very much. But bathing suits don’t like it very much.
Instead of caving to the mayo, I used my typical cole slaw dressing ingredients, substituting 0% fat plain greek yogurt for the mayonnaise to create a lightened up version of this crunchy favorite. I was delighted to this Cucumber Dill Greek Yogurt Salad mighty tasty! Crunchy, refreshing, and light … what’s not to love?
As I mentioned, this cucumber salad is easy peasy. Begin by peeling the cucumbers. Then cut them in half and use a spoon to remove the seeds. The seeds water the salad down quite a bit. Finally, slice the cucumber halves. Next, mix up the simple dressing. Whisk together the yogurt, dried dill, vinegar, sugar, salt, black pepper and garlic powder. Add the cucumber slices and toss to coat. That’s it!
This Cucumber Dill Greek Yogurt Salad will be a new summer go-to for cookouts and picnics around here for sure. And I’m thinking it will be perfect for a cool afternoon snack too. Try this one soon!

Cucumber Dill Greek Yogurt Salad
A light and refreshing side dish made with cucumber, dill, and greek yogurt.
Ingredients
- 4 large cucumbers (about 2 pounds)
- 4 tablespoon plain greek yogurt (I used 0% fat)
- 1 tablespoon dried dill
- 1 tablespoon rice vinegar (substitute red or white wine vinegar if needed)
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Peel, half, seed, and slice cucumbers.
- In a medium bowl combine yogurt, dill, vinegar, sugar, salt, pepper and garlic powder.
- Add cucumber to bowl and toss with yogurt/dill mixture until combined well.
- Additional salt and pepper to taste, if needed.
- Refrigerate covered until ready to serve.
I made this salad but used Greek yogurt instead of cream (added a little bit extra) and it was very yummy. Thanks for the recipe.

I made this and left it in the fridge for a day. The following day, the mixture had liquid with it. Did this happen to you. Is this still good to eat ?
It did happen with me. It is only the liquid from the cucumbers . Just give it a stir to mix and it’s fine. Sometimes it helps to slice the cucumbers and place in a colander with a small plate on top to press some of the liquid out before adding yogurt. Hope this helps. I love this recipe !

This sounds delicious! If I made a big batch the night before to be served around noon the next day, will it still be good? Or is it best to make it the day of?

I think it will still be good. You could always cut the cucumber up and prepare the “dressing” separately ahead of time and combine in morning of if you’re concerned.

My mother would de-seed the cucumbers because they were old and big cucumbers, we use young tender ones and leave the seeds in. Fresh and young are the clue.
I added fresh garden tomatoes, celery, and some blanched green beans for a nice dinner salad…served it with some avocado chunks. Thanks for the dressing recipe! Great dinner for someone on Weight Watchers!

You can certainly adjust the salt to your liking if you decide to make it again.
I love Mayo and can have it on my way of eating! Don’t like yogurt at all so this will be perfect. I will skip the sugar too. Don’t care for sweet salty unless it is a dessert. Thank you for the recipe! Sorry that I am going to tweek it!

I would say a day or 2 before it starts getting runny.
I chop up the cukes as they are seeds and skin. let rest with salt on a towel to draw out moisture. less chance of watering down your yogurt. fresh dill if you can buy it and use it same day. Dill is a awesome flavor/smell I wish I could find more recipes for it.
I sliced 1-1/2 cucmbers, plus cut up about 1/2 sweet white onions; used Greek vanilla yogurt; put 1/2 cup white vinegar in separate bowl, added dried Dill -about 1/4 tsp., 4 packets of Stevia, plus about 1/4 tsp of Black pepper. stirred well….
after salting cucumbers and rinsing well, poured the sliced cucumbers into bowl with liquid mix. Mixed everything together. Refrigerated for about 15 mins.
When removed from refrigerator, added about 2 tsps.
of good olive oil, stirred. Now add some of my Greek vanilla yogurt (I would have preferred Plain, but that’s all I had). Mixed everything well with a large mixing spoon to blend. Refrigerate for at least 15 mins. before serving. I am going to Add Chunks of Avocado. I will have it for my dinner…as a Light Meal.

This has all the ingredients of tzatziki, and being Greeks ourselves we totally loved it! Only added 1 tbsp of EVOO as well:) KUDOS for the fantastic recipe Amy!

You ladies might want to try this wonderful refreshing drink for a hot summer day.
1/2 gallon of cold water
1 large peeled cucumber
4 tablespoons of plain Greek yogurt
4 tablespoons of honey.
2 large tablespoons of chopped fresh dill.
Mix it all in your blender or your bullet.
When I make this I drink the entire half gallon of this juicy cucumber water at once.
So if you’re planing to bring this to a barbecue or a gathering be prepared to make at least 4 gallons. Your family and friends will love it !!!
