Chocolate Chia Pudding might look like a decadent dessert, but packed with goodness, like fiber, Omega 3, protein, vitamins, minerals and antioxidants, it’s the kind of dessert you can treat yourself to every day. Of course, it makes a great breakfast too!
It seems as if I’m a little late to the chia pudding party. I’m often slow to adopt new foods or food trends. It’s not so much not wanting to try new things, but more that we have so many other projects and activities going on that when it comes to our meals, we depend on our tried and true favorites. But chia pudding? Those teeny tiny chia seeds certainly pack a punch of goodness, but in pudding form? I was a bit skeptical.
While we have been adding chia seeds to our smoothies and yogurt for extra omega-3’s and fiber for a while now, I had never ventured into the world of chia pudding. Chia pudding has been on my radar for some time now, but I finally got around to giving it a try. What was I waiting for? I wish I wouldn’t have waited so long to give it a go. Not only is Chocolate Chia Pudding a delicious creamy treat, it is extremely easy to make. So easy, it almost seems like cheating. The only down side is having to wait a while for it to thicken up. But hey, we can wait a while, right? After all, patience is a virtue.
As I mentioned before, this Chocolate Chia Pudding recipe is super easy to make. Simply combine all the ingredients and whisk, whisk, whisk until the cows come home. Just kidding. Whisk until the cocoa powder is mixed in and then cover and refrigerate for at least three hours, which is a great reason to prep the night before to enjoy for breakfast. Even though Chocolate Chia Pudding looks like dessert, it is quite acceptable for breakfast, or a midday pick-me-up.
Finish up by adding your favorite toppings like berries, shredded coconut, toasted nuts, chocolate shavings, chopped dates, granola … the possibilities are endless! Grab a spoon and enjoy!

Chocolate Chia Pudding

Ingredients
- 2 cups unsweetened coconut milk (refrigerated in carton)
- 1/2 cup chia seeds
- 1/4 cup unsweetened dark cocoa powder.
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon* (optional)
Instructions
- In a large bowl, whisk** all ingredients together until combined.
- Cover and refrigerate for at least 3 hours.
- Serve cold with optional toppings like: berries, shredded coconut, toasted nuts, chocolate shavings, chocolate chips, or granola.
Notes
* The ground cinnamon is optional. It gives it a flavor similar to Mexican chocolate.
**Just keep whisking. It will seem that the cocoa powder will not mix, but it will. Keep whisking. It will foam a bit, but that’s okay. Of course, you can use a blender to mix it, but it will foam even more.
Makes about 3 1/2 cups.

This is my go to dessert every night on my Ketogenic diet . I love that it has less than 2 net carbs and it hits the spot to making me full on less calories than the average Keto desserts . Mine wasn’t very thick at all. I added heavy cream and used a mixer and it got thicker. It had good flavor and I topped with cool whip. Love these healthy recipes!
