This super easy hummus snack, Tomato and Cucumber Hummus Toast, is the perfect snack or quick appetizer that is full of flavor and totally satisfying when hunger hits.
I have so many friends who don’t eat hummus. They either don’t know what it is or don’t know what to do with it., but, boy, they don’t know what they’re missing. Really. It’s a wonderful food that is so full of flavor and can be used as a dip, a spread, condiment, or as addition for so many recipes, for example, this Stuffed Chicken Breast Recipe. It looks fabulous, doesn’t it? What a simple way to add so much flavor to a dish, and to fancy up a regular boring chicken breast.
This easy (so very easy) hummus snack is just another example of the magic of hummus. As a quick snack or cut up for appetizers for serving at a party, this tasty Tomato and Cucumber Hummus Toast made with one of my favorite hummus flavors from Sabra, Basil Pesto Hummus, is packed with flavor and texture and so very satisfying. And guess what? It’s lighter too. Hummus is a healthier choice for snack time, and hummus is one of those dips or spread that actually satisfies your hunger with a little. So you get lots of flavor and lots of satisfaction with smaller amounts.
For this hummus snack, as I mentioned before, I used Sabra’s Basil Pesto Hummus. It’s one of my favorite hummus flavors from Sabra. I think the Basil Pesto Hummus combines so well with fresh cucumbers and tomatoes, but you could use any hummus flavor. With all the hummus options from Sabra you’re bound to find a few that will become your favorites too.

- hummus (about 1-2 tablespoons per piece of toast)
- cucumbers, thinly sliced
- tomatoes, thinly sliced
- basil, roughly chopped
- salt and pepper to taste
- optional: a few pinches of dill
- Spread hummus on toasted bread, top with sliced cucumbers and/or tomatoes, and chopped basil. Salt and pepper to taste. If desired, sprinkled with dill.
