Strawberry picking is always a fun thing to do in spring when they’re in season. But without our strawberry monster of a niece at our side, most of the time we pick more than we can use! Thankfully, there’s no shortage of creative ways to use strawberries, like this easy Strawberry Salsa recipe. It’s super quick to prepare and made with basic ingredients.
This Ginger Lime Roasted Shrimp recipe is quick, light and easy. So very easy! It’s easy enough for a weeknight meal, yet elegant enough for any special occasion. It makes quite the perfect compliment for salad, pasta or rice, and could easily be served as an appetizer too. The ginger and lime flavors is bright and fresh without overtaking the shrimp. Shrimp should taste like shrimp. I think Bubba would agree.
I can’t tell you how much I have been craving this meal ever since making it last week. These Black Bean Tostadas with Cilantro Sauce discovered over at Tasty Kitchen are probably something I could eat every single day and never tire of. Seriously tasty and satisfying. And so very easy too. The cilantro sauce alone is a keeper and one we’ll be making large batches of to serve as a salad dressing. It’s so full of flavor and super light in calories—the best combo ever for salad dressing in my book!
Cherries are perfect for so many different dishes. I was tempted to go with a summery cobbler or crisp, since they’re always nice with fresh fruit, but I’ve been trying to keep things on the lighter side and simple, so I decided on a using them in a Roasted Cherry Parfaits that could be enjoyed for breakfast, dessert or as a snack.
So in the hunt for healthy snacks that are satisfying, I’ve once again returned to the handy dandy bean with a White Bean Spread with roasted garlic. Beans are a favorite around our home. Black Bean Dip, Black Bean Hummus and White Bean Chili frequent our table often. I’m sure this White Bean Spread will now be added to the repertoire.
