I can’t tell you how much I have been craving this meal ever since making it last week. These Black Bean Tostadas with Cilantro Sauce discovered over at Tasty Kitchen are probably something I could eat every single day and never tire of. Seriously tasty and satisfying. And so very easy too.
The cilantro sauce alone is a keeper and one we’ll be making large batches of to serve as a salad dressing. It’s so full of flavor and super light in calories—the best combo ever for salad dressing in my book! The salad dressing really makes me want to make and eat more salad, especially when the supply of fresh cilantro from our garden is in season. I know some people really hate cilantro. If you’re one of those people, I’d encourage you to try it again sometime. I’m a cilantro fan, but I have to say there have been a few times that it has tasted odd to me, almost like soap or something. Cilantro should not taste like that and I’m not sure if it has something to do with me or the particular cilantro. The cilantro we grow doesn’t taste like that. I’m just saying to give cilantro a second chance. It’s the only fair thing to do. 😉
