Prepping ahead is a big perk when it comes to entertaining on a busy game day, especially if you are needing to travel down the road to set up early for tailgating. It’s kind of like the perfect game plan in my play book. Anytime I can prepare food early so I can spend time enjoying the party is a total win-win. Entertaining is no fun when you’re stuck in the kitchen worrying about putting the finishing touches on food while everyone else watches the fun commercials, is it?

Chocolate Peanut Butter Footballs

These fun footballs are the perfect treat for game day!

Ingredients

  • 1/2 cup creamy peanut butter (other nut butters may be substituted)
  • 3 tablespoons salted butter, softened
  • 1+ cup powdered sugar
  • 8 ounces semi-sweet chocolate, chopped or chocolate chips
  • small amount of white icing for piping

Instructions

  1. Mix peanut butter and softened butter together in a mixing bowl until combined well. Gradually stir in powdered sugar until thoroughly combined into a dough ball. If mixture is too loose, add bit more powdered sugar,* a little at a time until mixture holds together in a large ball. Cover the peanut butter dough with plastic wrap and refrigerate for at least 15 minutes.
  2. Shape into little footballs about 1 1/2 inches long, place on a lined baking sheet, cover and refrigerate for at least 20 minutes to allow to firm up. Peanut butter footballs should hold shape well before dipping in chocolate. Add more refrigeration time as necessary.
  3. Melt chocolate according to package instructions.
  4. Dip peanut butter footballs one at a time into melted chocolate. Allow excess chocolate to drip off. Place chocolate dipped footballs on a waxed paper lined baking sheet, cover and refrigerate until ready to serve.
  5. Once chocolate dipped peanut butter footballs have firmed up, pipe on lace details with white icing using a fine pastry tip. Let icing harden. Cover until ready to serve. If making ahead cover and refrigerate until ready to serve.

Notes

  • *Finished peanut butter "dough" should be firm enough to make a ball that holds together. Additional powdered sugar (confectioners sugar) may be needed. Just add a tablespoon or so until the correct consistency is reached. If peanut butter dough seems too soft, tightly wrap dough in plastic and refrigerate for about 20 minutes to firm up before forming footballs.
  • Warm hands will make the dough soften. If dough begins to soften, return the dough to refrigerator to firm back up for a little while. The same can be said for working in a warm space. If it's hot where you are, you may need to keep returning the dough to the refrigerator, and/or add more powdered sugar to thicken up dough.
  • The peanut butter dough can be made ahead. Tightly wrap in plastic warp and refrigerate for a couple of days until ready to form the footballs. Once peanut butter footballs are formed, they can also be covered in plastic wrap and refrigerated until ready to dip in chocolate.
  • If concerned with peanut allergies, substitute an almond butter or other nut butter that is allowed for the peanut butter.
