If you engage in any amount of cooking then you’ve certainly made your share of boo-boos in the kitchen. Sometimes, thankfully, we’re surprised with a happy mistake. This Pimento Cheese Recipe was one of those times. Inspired by an appetizer of Fried Oysters with a side of Pimento Cheese, that we enjoy at one of our favorite local restaurants, Brick Street Cafe, I was on a mission to make the best pimento cheese.
I began with a basic pimento cheese recipe from a family cookbook as the base with plans for a few additions. Right off the bat I misread the base ratio ingredients and used over double the amount of cream cheese called for (a 3 can easily be mistaken for an 8, right?), then I doubled the cheddar to try to fix it, tried adjusting a few other things, and Shazam! The best Pimento Cheese appeared right in front of my eyes.
You can imagine my delight when my husband nearly swooned when tasting my happy mistake. This pimento cheese is some good eats no doubt. With a combination of cream cheese, cheddar, Monterey Jack, mayonnaise for a base how could it go wrong?
You’ll need a few ingredients: cream cheese, sharp cheddar, Monterey Jack, mayonnaise, pimentos, red onion, dill, celery salt, cayenne pepper, salt and black pepper.
The Pimento Cheese Recipe is easy to follow. Of course, if you like it more spicy, add a little more cayenne, or chop up a hot pepper of choice and toss in. After a little shredding, a little mixing and some measuring you’ll be spreading the good stuff in no time.
Full of flavor, with hints of pimento cheese and a little kick, this pimento cheese is great on crackers, celery. If you’re like me, trying to cut down on the carb intake, enjoy it on celery instead of crackers. Celery and pimento cheese are the perfect partners I say. This cheese spread would also be fantastic on a sandwich with turkey or ham.

Pimento Cheese Recipe
Pimento Cheese
A delicious cheese spread, with a little sass. Serve as an appetizer or spread on a sandwich.
Ingredients
- 8 ounces cream cheese, room temperature
- 2 cups grated sharp cheddar
- 1 cup grated Monterey Jack cheese
- 1/2 cup mayonnaise
- 3 tablespoons pimentos, mashed and rough chopped
- 1 tablespoon grated red onion (white or yellow would work too)
- 1/8 teaspoon dill
- 1/8 teaspoon celery salt
- 1/8 teaspoon ground cayenne pepper
- 1/8 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Beat cream cheese until smooth. Add all other ingredients and blend well.
- Refrigerate covered until ready to serve.

Once while vacationing in NC, we ordered a hot cheese dip and tortilla chips appetizer at a restaurant. It turned out to be pimento cheese dip. I have never thought of warm pimento cheese spread or the combination before but it is quite tasty. Since then I’ve made it at home several times.
Oh man! I can see myself growing very very addicted to this. And spreading on just about everything.

one of my favorite “low-carb” snacks is actually the simplest. just take some shredded mozzarella cheese, melt it in a skillet until it forms a cheese pancake and top it with whatever you want. i love it with pepperoni and mushrooms–its like pizza without the sauce and the crust!
This is good with a little shake or two of red pepper added to the mix. And, served with a pepper jelly on crackers……:)

I am from Greenville and I am curious which local restaurant you were referring to with the inspiration for this recipe. I have tried many around and have my favs too. I have made my own version using cayenne and loved it. Can’t wait to try this version.

I make it almost the same except omit the cayenne and add one can of drained Ro-Tel. It’s great as a spread and also makes a fabulous open faced grilled (under broiler) sandwich.

My pimento and cheese is my most requested dish. My recipe is very similar to yours. I am convinced that the grated onion is the secret! People don’t even realize that there’s onion in it; but, it just kicks it up a notch!
