Brownies are practically an American staple. Whether it’s a neighborhood get-together or school fundraiser, someone always always brings brownies. And we all know that they get gone! So why not mix it up a little this summer? Combine your favorite candy and America’s favorite dessert for an Almond Joy Brownie! The sweetened coconut flakes feed my coconut addiction, and the texture takes away some of the monotony of regular brownies. Plus, the sliced almond sprinkling on top gets nice and toasted, balancing out the sickly sweetness of whatever else made it to the dessert table.

We love love love this brownie skillet recipe (just substitute chocolate chips for the chopped mint and vanilla extract for the peppermint extract), but if you don’t quite have time for homemade, your favorite box brand of brownie batter works just fine! Simply follow the regular mixing instructions on the box. And if you do want to use our favorite homemade brownie recipe in the whole wide world, just increase the coconut measurement to 2 cups, and the sliced almonds to 3 tablespoons.

This recipe is super simple and perfect for throwing together on the fly. You’re basically going to layer all the ingredients for optimal aesthetic and taste! First the brownie batter will be divided in half and then spread it smoothly in the bottom of a 9×9 inch baking pan (unless you are using the skillet brownie recipe, in which case whip out your trusty skillet). Then, evenly sprinkle the sweetened coconut flake over the first layer of brownie batter. It will look something like a beautiful snowfall over a really muddy field. Next, gently spread the rest of the brownie batter on top of the coconut. Too much touching and messing will disturb the evenness of the sweetened coconut flake layer, so, depending on the thickness of the batter, you may have to use a laying, smoothing, flinging technique. Be patient. You will get there in the end. Finally, sprinkle those lovely almond slices on top. The almonds will become somewhat toasted during baking but feel free to slightly toast them before hand if you like your kernels well done.

This super easy recipe for a delicious brownie made with coconut flakes and sliced almonds.

Ingredients

  • brownie mix for making a 9x9-inch pan*
  • 1 1/3 cup sweetened coconut flakes
  • 2 tablespoons sliced almonds

Instructions

  1. Preheat oven to package instructions.
  2. Prepare brownie mix to package instructions.
  3. Once prepared, smooth half of the brownie mix into a 9x9-inch baking pan
  4. Sprinkle the coconut flakes evenly over the first layer of brownie batter.
  5. Gently spread the remaining half of brownie mix on top of the coconut flakes, being careful not to upset the evenness of the sweetened coconut flakes.
  6. Sprinkle the almond slices on the top layer of brownie.
  7. Bake for the time on package instructions.
  8. Let cool, and enjoy!
