Ingredients
- 1/3 cup hot water
- 2 cups confectioner’s sugar (powdered sugar)
- 2 large egg whites
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
Instructions
- Create a simple syrup in a small saucepan by whisking together hot water and confectioner’s sugar; bring to a boil for 1 minute, whisk, and set aside.
- Add egg whites, cream of tartar and salt to a mixing bowl. Using an electric mixer beat at high speed, slowly streaming in hot simple syrup, and vanilla extract. Beat at high speed until preferred spreadable consistency is reached.

I have tried to make this using another similar 7 Min recipe and it got hard and crusted. Is this more like a marshmallow frosting consistency which soes not harden? If it was something I did wrong in the first recipe I tried could you point that out so I don’t mess up your wonderful fluffy white concoction?

Meistie, My grandmother also had a 7Minute frosting that crusted. I LOVED IT. She also put it on a pineapple cake, but she has crusted pineapple layered between the layers of cake. If you don’t mind, where did you find your recipe? She has been dead for twenty years. I loved it as a child, and no aunts are alive to share it, if they had it.

I have not used this exact recipe, but I have used carton egg whites in another 7 min. Frosting. They worked just fine.
Oftentimes nowadays eggs themselves are pasteurized and guaranteed salmonella free.
I was wondering the best way to store this cake. Can make it the day before I need it.
I am going to the store and get my pineapple and some juice. Then I will come home, make, and store in my tum tum. I think that what makes the icing so soft is the confectioners sugar instead of granulated. I may be wrong but it definitely won’t last long.
This is the easiest frosting I have ever made and it came out fluffy and beautiful. The only issue I am having is with the flavor. My frosting taste like perfume. 🙁 I double checked/smelled/tasted all of my ingredients and containers and I can’t figure out why it taste like that. I may have poured too much vanilla extract.. can that be the issue?

It’s the powdered sugar. I had used Family dollar brand powdered sugar and it tasted like perfume. Use Domio.

I use very warm Karo syrup in my recipe.
Egg whites mixed untill they have white peeks.
Slowly pour in the syrup while mixing when the whole bottle of syrup is gone blend in 2 or 3 teaspoons of vanilla.
Then mix in 1/2 cup of granulated sugar.
This gives it that old fashion gritty texture.
You will love it.
I make this with a coconut cake.
I make 2 boxes of super moist cake mix according to box ingredients
Back the cake in a large deep roasting pan.
When it’s done take out and while it’s still hot poke holes all over cake, don’t go all the way to bottom.
Spread 1 /2 can of Lopez cream of coconut
On top of cake. Frost it with frosting then add coconut to the top.

Is there anyway to replace the cream of tartar? It’s nearly impossible to get it where I’m from
I just did a quick search online, according to a few sources (one being all recipes.com) it says to substitute 1/2 teaspoon lemon juice or distilled white vinegar for every 1/8 teaspoon of cream of tartar. So, using that rule, this recipe would require 2 teaspoons lemon juice or distilled white vinegar instead of cream of tartar.

can I frost a cake a day before and leave it out at room temperature? Or should it be refrigerated
It does not require refrigeration but I would not make the frosting more than 12 hours or so ahead of time. It could last for a day but I wouldn’t want to take a chance as it may begin to deflate after a day.
ive been beating for over 5 mins now and it’s hardly even doubled. Still wet, not fluffy. What’s an estimate of beating time? Just looks like glaze at this point.
I beat it for 10 mins. It never fluffed. 🙁 it’s the consistency of Elmers glue and has the perfume flavor mentioned above. Bummer. I really wanted to pipe the frosting on cupcakes, but I’m not going to be able to use it.
Make sure all utensils are not oily. Once it contact with oil it will not fluffy no matter how long u beat.????

for it not fluffing you may have added the simple syrup to soon ans the wrong flavor were your eggs old maybe?
