Confession: the bulk of this post actually has nothing to do with Chimichurri itself. That being said, Chimichurri has got to be the best name for a food I have ever heard. And what pray tell, is in a name you ask? Well, it introduces the potential for what to expect, something awesome or exciting or cozy or hearty. I have long disdained and publicly denounced the name for one of my begrudgingly favorite barbecue sides, slaw. Like you and yorn, I love slaw itself, but it sure has an awful name.

I’ll stop talking about the name of slaw right now so you hopefully don’t lose your appetite, but back me up here, it is an unappetizing name. Chimichurri on the other hand (heart eyes emoji face) just sounds so beautiful and exciting and spicy and cool that I can’t wait to make it again.

Also, we’re big Mary Poppins fans around here, so every time one of us heard or said or read the same, the Johnson family band broke out into ‘Chim Chim Cher-ee’ without fail. And since Mary Poppins is by far the greatest movie of all time, this is only another major plus. I don’t know if Mary Poppins ever had Chimichurri, but I know she would have loved it as much as we do. As would the fabulous Dick Van Dyke!

Now, onto the food itself. Chimichurri is a delicious, uncooked sauce with a bit of spice that is traditionally served with meat and fish, especially grilled. It comes in your favorite Christmas colors (red and green), but this recipe is obviously green. It is most excellent served with beef, but delicious with chicken and fish. And it’s a breeze to prepare! Just toss everything in a food processor or blender and blend until it reaches your desired texture. If you like it more spicy, add more pepper to your preference. Easy Chimichurri Recipe

Yield: About 2/3 cup.

This fresh and easy Chimichurri recipe is a flavorful vibrant green sauce and the perfect partner for beef, chicken and fish.

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1/2 cup fresh parsley leaves
  • 5 garlic cloves
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground pepper

Instructions

  1. Add all ingredients to a food processor or blender and process until smooth. Add additional salt and pepper to taste.
  2. Serve within an hour or cover and refrigerate up to 2 days.
