Almonds and cherries always compliment each other, and this recipe for Almond Cherry Oatmeal Bars is no exception. Toasted almonds and dried cherries mingle with oatmeal and a hint of cinnamon to create a wonderful textured dessert bar.

- Line the baking sheet with baking parchment that is a little longer than the pan to easily lift out the whole batch of bars at one time before cutting. It makes for easy slicing of the bars and helps avoid messing up the baking pan with cut marks.
- Allow the bars to completely cool for easier slicing. Of course they can be enjoyed while still warm but they will be a bit messier to deal with, oh so gooey, but most definitely messier. Which is not necessary a bad thing, especially when topped with a scoop of vanilla ice cream.

Almond Cherry Oatmeal Bars Recipe
A super easy homemade dessert or snack bar made with oatmeal, toasted almonds, and dried cherries.
Ingredients
- Crust:
- 1 1/4 cups all-purpose flour
- 1 1/4 cup old fashioned oats
- 3/4 cup packed brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 8 tablespoon salted butter, melted
- 2 tablespoons lemon juice
- Filling:
- 1 1/2 cups dried cherries
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 1/2 teaspoon lemon zest
- 3 tablespoon all-purpose flour
- 1/2 cup packed brown sugar
- 3/4 cup sliced almonds, lightly toasted
Instructions
- Preheat oven to 325-degrees F. Prepare a 9x13-inch baking pan by buttering or lightly coating with cooking spray.
- Crust:
- Prepare crust by whisking together flour, oats, brown sugar, salt, baking soda, and cinnamon. Stir in melted butter and lemon juice until combined. Evenly press mixture into the bottom of prepared baking pan.
- Filling:
- Combine dried cherries, sour cream, vanilla extract, lemon zest, flour and brown sugar. Spread mixture over crust. Sprinkle even with toasted almonds, and lightly press almonds into cherry/sour cream mixture.
- Bake at 325-degrees F for 35-40 minutes, until light brown. Let cool completely in pan before cutting.

Does the oatmeal need to be quick cooking kind as I only have regular?
By “regular,” do you mean old fashioned oats? If so, yes, you can use them. Steel cut oats or Scottish oatmeal would not be best for this recipe.
I wonder if you could substitute a whole mile Greek yogurt for the sour cream?

These were so easy to make & they were very tasty! I used less brown sugar (because I ran out) and sprinkled with mini chocolate chips.
