Each summer we have two things, okay maybe three, that we are overwhelmed with from our garden. Overwhelmed may not be the correct word. It has somewhat of a negative connotation, and have a bountiful harvest is anything but negative. Perhaps, “overly blessed” would be a better way to put it? So we are overly blessed with three things from our garden: tomatoes, basil and zucchini.
With my new penchant for the spiralizer (a fun new kitchen tool), I’ve come to appreciate the bulk of zucchini we have this time of the year. It can quickly be put to use in delicious dishes like Sesame Zoodles or these Shrimp and Pesto Zoodles Recipe. And when I say quickly, I mean quickly. If you have never used a spiralizer, it only takes a few short minutes to turn 3-4 zucchini into a pile of lighter zoodles, or noodles.
It takes just a little practice to learn how to use a spiralizer, but once you get the hang of it you can make thin or wide noodles not only with zucchini, but also yellow squash, cucumber, carrots, sweet potatoes — basically any vegetable that is sturdy enough to hold the shape. I’ve even seen brilliant beets cut into vegetable noodles. They are so striking and a fabulous addition to a salad.
How to make Shrimp and Pesto Zoodles
Those healthy zucchini noodles can quickly turn into Shrimp and Pesto Zoodles Recipe. You can make your own fresh Basil Pesto or buy it pre-made. Then while you are spinning out the zucchini noodles, quickly boil shrimp for a couple of minutes. Toss it altogether and you’re done. So super simple. And so very tasty!
- Begin by making noodles out of zucchini using a Spiralizer or other special tool for making vegetable noodles. In a pinch a box grater can also be used to make zucchini noodles.
- Boil shrimp until done. Peel if needed and chill to stop cooking.
- Toss zucchini noodles, cooked shrimp and basil pesto together until fully incorporated. (For this recipe, zucchini noodles can be used uncooked.)

Shrimp and Pesto Zoodles Recipe
A light and tasty entree or side dish made with boiled shrimp, basil pesto and zucchini noodles.
Ingredients
- 3-4 cups zoodles (zucchini) noodles (about 2-3 medium zucchini spiralized)
- 1 pound shrimp, deveined, boiled, peeled, chilled
- 1/2 cup Basic Basil Pesto Recipe
Instructions
- Toss zucchini noodles and boiled shrimp together with pesto until incorporated.
Notes
Makes 4-6 modest side dish portions or 2-3 main entree serving sizes.
