one of our favorites from last year is a creamy celery root soup – totally vegan using soaked cashews and truly one of the most glorious soups i’ve ever, every eaten!! stunning and easy!

Brilliant! I love sweet potatoes and thought I already had covered all possible bases on how to cook them. Apparently not. I can’t wait to try this wonderful idea. Tomorrow. Morning. As soon as the stores open.
This looks great. I am not a sweetened up sweet potato fan. My favorite way of cooking them is to roast 3 or 4 sweet potatoes whole until they are fork tender. When they are cool enough to handle, scoop out the flesh and smush it up with a potato masher. Stir in some butter (2T to a full stick depending on your taste), a tablespoon of maple syrup and one chipotle pepper in adobo sauce that has been finely chopped. Taste and add salt if necessary. It’s a great make ahead dish (I do this the night before thanksgiving) but remember that the pepper will intensify if you hold it.

these look awesome. I think I’m going to have to try them. I am forced into making sweet potatoes that tasted like french toast every year, because my family (not my kids) have come to expect them. I think I may change it up a little this year with these yummy looking things. Have you ever had horseradish mashed potatoes? I make those every year, those and roasted brussel sprouts. I try it make as much whole foods as humanly possible!!
