Lime Olive Oil Muffins

A few weeks ago I made these Lime Olive Oil Muffins I discovered at Tasty Kitchen. It’s a basic recipe, perfect for a breakfast muffin, and they’re gluten-free. I think they turned out nice: moist, with a slightly crunchy top. My mind is swirling with all the possible versions and/or additions that can be added to these. My daughter thought chocolate and coconut would be a good combo. She’s all about chocolate and coconut lately. It runs in the genes.
