I don’t know about you, but it’s hot up in here y’all. We’re trying to keep things cool however we can. Cold drinks are most definitely in order. A couple of weeks back I made a batch of these Lemon Mint Ice Cubes. They’re so basic I almost didn’t post them, but then I thought how they’ve been so handy to have in the fridge for a little something extra in a glass of water or iced tea, so why not share?
I chose lemon and fresh mint, but just think of all the fun combos you could come up with too using mint, basil, lemon, lime, orange, and other herbs or berries.
Extra easy. Mix everything up in a blender or food processor until the mint is finely chopped.
Pour in ice cube trays and freeze.

Once frozen just toss the ice cubes in a zip lock bag to store in the freezer.
Please note, I chopped the mint very finely, but if you don’t care for the mint pieces in your drink (they don’t bother me at all), pour the mixture through a fine mesh strainer before filling ice cube trays.
Toss a couple of cubes in some water, tea or even lemonade, and enjoy!

Keep it cool y’all!
Oh Amy I love this idea!!!
So smart Amy!!! You have inspired me!
My 17 year old son just walked in and said, ‘Those look amazing!” Guess we’ll be making a batch soon.
Great idea!

LOVE this. Can I just rub them all over my face?
Yes? No?
How fancy are you?? These look so summery and perfect!
these are great! I’ll be making some later!
I’ve been thinking about this idea lately! Love it…
I think I may just be trying this!
Amy .. don’t know what to say . I have seen many people freezing stuff like that .. but you’s look like a piece of art! So gorgeous.
I love this recipe. I do the same thing when mixing Margaritas or Sangría so they won’t become watery from all the melted ice.
I feel cooler already. Too bad I didn’t have these the other night when my AC wasn’t working! We all would have been much happier campers sipping on fun lemony minty ice water!
OMG!!!!! Brilliant! Simply brilliant! I love this idea.
New reader here. Your stuff looks amazing. I’m hooked. Can’t wait to come back again.
Lots of yummy love,

While they sound DELISH, they look like somthing you’d find in the swamp…Maybe if you froze whole mint leaves and used minted water?
This is such a brilliant idea! It will be perfect for my iced tea addiction.
How refreshing! Yum!
Hi there…these look very pretty. I haven’t tried them yet b/c I’m going to try to find the square cubes at BB&B first! However, I’d like to know if you can described what happens to the drink as these dissolve. I’ve looked thru the comments and don’t see this question asked yet. Does the drink become filled with the bits of mint? Do you think this ice cube idea would work with a whole mint leaf? This is a wonderful idea and am so glad you shared! Thanks!
Hey Desi!
The mint pieces sink to the bottom as the ice melts. As I mentioned above, if you’d rather not have the mint pieces in your drink, use a fine mesh sieve to drain the liquid before pouring into the ice cube trays. Whole mint leaves would be pretty but you may have to cut them down some so they’ll fit in the ice cube.
Hope that helps and thanks for stopping by!

What a fun idea Amy! Thanks so much for sharing 🙂 Can’t wait to jazz up my drinks with these ice cubes.
This is such a fantastic idea! LOVE it and can’t wait to try.
Very herbalicious! Especially this time of year when even the herbs are so prolific I can’t use them all.
Did I ever mention I’m part southern. That’s right; ten years in North Carolina qualifies right? Or at least that both my children were born in Raleigh. I miss it but you have reminded me of the heat and I’m sort of loving Colorado too! 🙂
Love these! It’s all in the details. 🙂
Wow, this is super simple. But I’m glad you posted it!
There are so many possible variations .. it could also be used in mojitos. The mint would be perfect in them.
