If you’ve been following my blog for any amount of time, you know that simple classics are kind of my thing, and that means beans are one of my go-tos, especially for summer and summer celebrations like The 4th of July. I mean come on, what’s more classic than grilling out with friends on a warm night during the summer? And, of course, it must include everyone’s favorite baked beans!

That being said, finding a twist on those classics is pretty fun too. Our favorite way to cook during the summer is grilling (duh), so I thought I’d combine another one of our favorites and make a Cowboy PizzaThis Grilled Cowboy Pizza combines a cowboy’s favorites, BUSH’S Honey Chipotle Grillin’ Beans and Kielbasa sausage. And let me just say, it is oh so yummy and wannabe cowboy approved! It would also make a great appetizer for a summer cookout or gathering. If you’ve never made grilled pizza at home, it is not only easy, but fun to make. A pizza stone comes in handy, as does a pizza peel. They are not completely necessary but they do make it much easier to grill pizza right at home. This grilled pizza recipe is flexible, adjust amounts to your preference. Feel free to substitute your favorite sausage or maybe even … bacon! Grilled Cowboy Pizza Recipe

Yield: Makes one 12-inch pizza.
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients

  • 8-10 ounces fresh pizza dough* (for each pizza, makes approx 12-inch pizza)
  • 1 cup BUSH'S Honey Chipotle Grillin’ Beans**
  • 6-8 ounces kielbasa or smoked sausage, sliced thin
  • 1 1/2 cup shredded mozzarella cheese

Instructions

  1. Place pizza stone*** on the grill, close and preheat grill to 500-degrees F.
  2. Dust a pizza peel (or large cutting board)**** with corn meal; stretch and shape pizza dough to about a 12-13-inch round (or desired shape). Pinch edges to create crust.
  3. Spread an even layer of beans over pizza dough. Top with sliced kielbasa and shredded mozzarella.
  4. Carefully slide pizza onto preheated pizza stone, close lid and cook until crust is crispy and cheese has melted, about 4-7 minutes, depending on grill.

Notes

Adjust the amount of beans, sausage and cheese to your preference.

*Make your own pizza dough or purchase prepared fresh (uncooked) pizza dough from your local grocer. Many grocery stores now carry it either in the deli or bakery department or in the refrigerated or freezer sections. If you can’t find it, always ask.

**One cup of beans is the approximate amount for making one 12-inch pizza. Add more if you so desire! Use any leftovers for a tasty side dish for any BBQ recipe.

***If you are not using a pizza stone, stretch and shape pizza dough to desired size. Lightly brush with olive oil. Place directly on preheated grill grate, oiled side down. Lightly brush top with olive oil; cook for 2 minutes. Carefully flip pizza dough, add topping and cook until done.

****You can also build the pizza directly on the preheated pizza stone. If you choose this method, stretch and shape the dough, prior to putting on stone, place stretched dough on stone and work quickly topping with ingredients. Close lid and cook until done.
