Yesterday Randy brought home a salad for me from Panera. A Power Salad to be exact. Power is a good thing when you’re dragging tail mid-day. It was a combination of spinach, cucumbers, onion, chicken, hummus, and a lemon wedge for dressing. It was a fantastic flavor combination and I did power through the afternoon. No post-lunch sluggishness. No sirree.
After thinking about it, I realized how easy of a salad it was and how I had no excuse to have all the ingredients on hand in the future. So I decided to make my own Power Salad combo, sans the chicken. Of course grilled chicken or rotisserie chicken could easily be added, but with the hummus and addition of olives in this version, the absence of chicken works just fine for me.
This easy Power Salad is the perfect salad to pack for lunch too. It would be so quick to assemble the night before, and have ready to go. That’s what I like about this salad. The ingredients are basic and so simple to keep stocked up whenever you are needing a little bit of power!
The recipe below doesn’t show amounts as it’s basically a combination in the amounts you choose. Add in your favorite fresh veggies, maybe some avocado ,or a boiled egg instead of chicken if you’re needing some more protein.

A super simple and healthy salad that will not leave you feeling sluggish but with lots of energy.
Ingredients
- baby spinach leaves
- cucumber, slices,
- red/purple onion, thinly sliced
- olives
- sunflower seeds
- red pepper slices
- hummus
- salt
- pepper
- wedge(s) of lemon per salad
Instructions
- Combine all ingredients together in desired amounts with a squeeze or two of lemon and enjoy!

This might seem like a silly question…. When you combine all the ingredients together, do you include the hummus and the seeds then squeeze lemon over the whole works? The photo displays the ingredients separated. Thank you!
