Southwestern Black Bean Pasta Salad

This tasty meatless pasta salad made with black beans, tomatoes, corn, chilis is great for any menu spread.

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 8 ounces rotini pasta, uncooked
  • 1 can (about 15 1/4 ounces) whole kernel corn, drained
  • 1 can (about 15 ounces) black beans, drained and rinsed
  • 1 pint grape or cherry tomatoes, halved
  • 1 small can (about 4 1/2 ounces) chopped green chiles, drained

Instructions

  1. Cook pasta according to package instructions. Drain; set aside.
  2. In a large bowl, whisk together mayonnaise, lime juice, chili powder, cumin and salt.
  3. Add cooked pasta and remaining ingredients; toss to combine and coat pasta.
  4. Refrigerate covered until ready to serve.
