Southwestern Black Bean Pasta Salad
This tasty meatless pasta salad made with black beans, tomatoes, corn, chilis is great for any menu spread.
Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 8 ounces rotini pasta, uncooked
- 1 can (about 15 1/4 ounces) whole kernel corn, drained
- 1 can (about 15 ounces) black beans, drained and rinsed
- 1 pint grape or cherry tomatoes, halved
- 1 small can (about 4 1/2 ounces) chopped green chiles, drained
Instructions
- Cook pasta according to package instructions. Drain; set aside.
- In a large bowl, whisk together mayonnaise, lime juice, chili powder, cumin and salt.
- Add cooked pasta and remaining ingredients; toss to combine and coat pasta.
- Refrigerate covered until ready to serve.

Made this. It’s delicious only substitute was the dressing I made an avocado lime dressing with cumin. What’s missing is the fresh cilantro which I added.
That would be good–I felt that the recipe dressing was over dressed (IMO) for ingredients and think fresh cilantro would be the added touch.
