Let me share with you one of my favorite food combos: black beans and red onion. Yep. Strange you say? If you’ve had the combo you know exactly what I mean, and I find it hard to believe that you wouldn’t agree wholeheartedly. It’s an umami thing for me. The texture and flavor is the perfect marriage. Of course, that’s just my opinion.
Anyway, last week I was craving the perfect duo and threw together what I like to call a Black Bean Bar for lunch. I warmed up some beans with a few added spices, and in addition to the chopped red onion, shredded cheese, avocado, cilantro, and sour cream joined the party.
Honest-to-goodness, it was the most satisfying lunch I’ve had in a while. It spurred me on through the day too. No sluggish afternoon blahs. And everything can be prepped ahead, and then warm the beans quickly stove top or in the microwave.

Black Bean Bar Recipe
Black Bean Bar
A healthy and tasty way to enjoy black beans.
Ingredients
- 2 - 15 oz. cans Black Beans, drained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- (adjust seasonings to preference)
A few topping options:
- red onion, finely chopped
- cheddar cheese, shredded
- sour cream
- avocado, diced
- fresh cilantro
Instructions
- Cook beans with seasonings until warmed.
- Add desired toppings to beans. Enjoy!
Love bean bars, but I skip the onions. Unfortunately we are not buddies. That’s okay I still rock the bean bars during lunch 😉
I tried this recipe today for lunch, it was perfect! I topped it with avocado, salsa and sour cream. Ok and maybe some tortilla chips 🙂 Great idea, thanks!
