Thanksgiving’s right around the corner? How can that be?!? Time flies much too fast these days. It ain’t fair I say. Not one bit. But what’s a girl to do…

Well, for starters, get your ducks in a row and start planning what to put with that turkey. Here’s a no-brainer, if you’re planning on sweet potatoes for your spread, Scalloped Sweet Potatoes, another delectable recipe from Tasty Kitchen.

It’s a savory take on sweet potatoes and a side that shouldn’t be saved just for holiday tables.

  15. Brilliant! I love sweet potatoes and thought I already had covered all possible bases on how to cook them. Apparently not. I can’t wait to try this wonderful idea. Tomorrow. Morning. As soon as the stores open.

    This looks great. I am not a sweetened up sweet potato fan. My favorite way of cooking them is to roast 3 or 4 sweet potatoes whole until they are fork tender. When they are cool enough to handle, scoop out the flesh and smush it up with a potato masher. Stir in some butter (2T to a full stick depending on your taste), a tablespoon of maple syrup and one chipotle pepper in adobo sauce that has been finely chopped. Taste and add salt if necessary. It’s a great make ahead dish (I do this the night before thanksgiving) but remember that the pepper will intensify if you hold it.

    these look awesome. I think I’m going to have to try them. I am forced into making sweet potatoes that tasted like french toast every year, because my family (not my kids) have come to expect them. I think I may change it up a little this year with these yummy looking things. Have you ever had horseradish mashed potatoes? I make those every year, those and roasted brussel sprouts. I try it make as much whole foods as humanly possible!!

    So, we tried these, and although they were good, the amount of bacon and cheese totally covered the flavor of the sweet potatoes. I’m not a huge fan of super-sweet sweet potatoes, but this reminded me of the bible verse about hiding your light under a bushel. This recipe buried the true quality of sweet potatoes. 7 people had them from 3 generations in our family, and we all agreed that although they were good, they weren’t something any of us would request again. Sorry Amy, I normally ADORE your recipes. :(
