Our collection of cookbooks continues to grow, but one recent addition made it’s mark on our family yesterday in the form of chicken wings.
Meet Carrie Vitt, food blogger and author of Deliciously Organic, a tasty collection of recipes utilizing all organic ingredients. You can read about Carrie and her journey to wellness via organic cooking on her website of the same name, Deliciously Organic.
Deliciously Organic is an approachable cookbook for anyone cooking organically or not. And even though there are a number of tasty looking salads in Deliciously Organic, Carrie shows us that eating organically means so much more than salad. You’ll find a range of tempting recipes like Sour Cream and Lemon Pancakes with Blueberry Puree, Beef Stroganoff and, get this, Strawberry Chocolate Cream Cheese Cupcakes. Photography by another fellow food blogger, Helene from Tartelette rounds out the tasty recipes beautifully. It’s really a lovely book.
My copy of Deliciously Organic is already marked with stickies for several recipes I want to try. But Carrie’s recipe for Oven-Roasted Wings premiered yesterday in our home as a trial-run for our Super Bowl Sunday menu. It was a simple throw together, toss in the oven, and check every now and then recipe.
And boy, were they scrumptious. Don’t take my word for it though. Here are quotes from my family, who, by the way, didn’t wait for them to make it to the table but devoured them standing around our kitchen island:
My husband: “Each wing tastes better than the one before.”
My 15 year old daughter: “These are slap your mama good.” (She was proud to use the phrase having just learned it this week.)
My 12 year old son: “I can’t stop eating them.”
We’re definitely going to be adding these Roasted Chicken Wings to our Super Bowl Menu, and I have a feeling a couple of times before then. I guarantee, the big game might disappoint but these chicken wings won’t.
Oven Roasted Wings Recipe
from Deliciously Organic by Carrie Vitt
serves 6-8
1/2 cup unsalted butter
1 cup whole cane sugar or Sucanat
1/2 cup red wine
1/2 cup soy sauce
1/4 cup fresh lemon juice
2 teaspoons Dijon mustard
4 tablespoons hot sauce (if you like ’em spicy, add more)
4-5 pounds chicken wings
2 teaspoons sea salt
1/4 teaspoon black pepper
2 teaspoons garlic powder
Preheat oven to 350° F.
Melt butter in a small-medium saucepan over medium heat.
Add the sugar, wine, soy sauce, lemon juice, Dijon mustard and hot sauce, and whisk together until sugar is dissolved.
Arrange chicken wings in single layer on large baking sheets/pans.
Pour sauce over chicken wings, being sure to coat all sides thoroughly.
Sprinkle evenly with salt, pepper and garlic powder.
Bake wings at 350° F for 35-40 minutes. Reduce heat to 250° F, and continue cooking for 4 hours. Ever hour or so, turn wings over.
