Chocolate Chip Oatmeal Cookie Creme Pies

These Chocolate Chip Oatmeal Cookie Creme Pies are an easier version of the regular creme pie. I guess they are really giant cookie sandwiches. Whatever you want to call them, they’re good.
I know I’ve mentioned our daughter, Hope, a bunch over the past week. I suppose after living with someone for 18 years, then they go away for a month (actually 33 days, but who’s counting), makes it kind of a big deal when they come home. She’s definitely a breath of fresh air around here. Not that I’m complaining. I love my husband dearly, and our son, Hank, too. He’s a mighty fine young man. They’re both fun to be around. It’s just that I’ve found myself outnumbered in the boy to girl category. Something I hadn’t thought much about in the midst of all the college preparations and what not. Even our dog, Jake, is a male. It’s kind of weird.
Anyway, we had a lovely, laid back weekend while she was here. No big plans. She visited with some friends, talked a lot about her classes with her dad (that’s what they do, they discuss politics and theories and important stuff of the world—I know I’ve bored him to tears for the past 33 days), she watched some favorite shows, and she cooked.
Both nights, at around 10:30 pm, Hope would head to the kitchen. Friday night it was pancakes with a chocolate swirl, plus a lesson in whipped cream, just passing the point of perfection, which is easy to do the first time around. Saturday night it was a favorite standard that she can just about make now with her eyes closed: Oatmeal Chocolate Chip Cookies. She packed most of the sweet treats up to share with friends back at school, but said she was leaving some behind for the sole purpose of being used for Chocolate Chip Oatmeal Cookie Creme Pies. What?!? Is that what they’re teaching them in college these days? I’m good with it.
She’s one smart cookie.

Of course today is her birthday, so I just had to share this inspiration from the birthday girl. (Happy Birthday, Hope!)
A batch of the creme filling was whipped up in no time. Butter, cream cheese, powered sugar, vanilla and a dash or two of cinnamon blended together to make a sweet binding for these oh so good Chocolate Chip Oatmeal Cookie Creme Pies. I’ve made traditional creme pies before. Don’t get me wrong, they’re good—great even. But these cookie creme pies are just so darn easy, it’s hard not to like them a little bit more. Plus they were Hope’s idea so that made them taste even better.
I hope you enjoy them as much as we did. A platter of these would be great served at a party, or send one along for a lunchbox surprise. Enjoy!
Chocolate Chip Oatmeal Cookie Creme Pies Recipe
Chocolate Chip Oatmeal Cookie Creme Pies
A super easy treat to make for a fun party food.
Ingredients
- 48 (2 1/2-3-inch) Oatmeal Chocolate Chip Cookies (recipe here)
- For the creme filling:
- 8 ounces cream cheese, softened
- 4 ounces (1 stick) butter, room temperature (salted butter is just fine)
- 4 cups confectioners (powdered) sugar (about 16 ounces)
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Instructions
- Using an electric mixer, beat together cream cheese and butter, until smooth. Add powdered sugar, vanilla and cinnamon and continue beating until smooth.
- Frost flat side of one cookie with about 1 1/2 tablespoon of filling and top with another cookie.
- Serve right away or store covered and refrigerate until ready to serve.
Notes
Filling makes about 2 cups (enough filling for 24 (2 1/2-3-inch) cookies sandwiches).

These do look like perfection. Oatmeal Cream Pie’s are one thing from my childhood I’m still tempted by when I walk by them in the grocery store. Homemade is always better. Great idea Hope!
