Brie, Red Onion, and Mango Pizza Recipe

This Brie, Red Onion, and Mango Pizza recipe may seem unusual but it is a simple and tasty pizza combination that will surprise you.
Some recipe combinations are born out of pure inspiration and creativity. Others, out of necessity.
We were trying to use up the remaining groceries one of the last evenings during our vacation a few weeks back. Earlier in the week we had stocked up a ton of things in order to avoid restaurants as much as possible, and our supply had dwindled down to some random things, a few of which were: a chunk of brie, a bit of gouda, mozzarella slices, pepperoni, part of a mango, a half a pound of shrimp, a red onion, flour tortillas, and leftover pizza sauce.
We did consider going out to eat because of our random ingredients, but honestly, we were pooped. Make ourselves presentable, and then sit upright as well? It was all much too demanding. So we decided on using the flour tortillas to make cracker pizzas (or pizza crisps, or whatever you’d like to call them).
The ingredients were spread out on the counter for each of us to make our own combination. Hank grabbed the pepperoni, Hope stuck to the cheeses, and Randy decided on trying a shrimp and gouda combo. When I started assembling a brie, red onion, and mango pizza, Randy was a bit unsure, and totally not interested in me making another for him.
In the end I was happy I didn’t have to share. The combination of brie and mango … oh my word … and with slivers of red onion … just perfect!
(For the record, where we were, brie was cheaper than Oreos, and a mango less than an apple. Can you believe it? Crazy, I know! We ate lots of cheese that week.)
While it certainly wasn’t a combination that I would have normally thought of at home, I’m so glad I did. You work with what’s available, right? Sometimes you’re surprised when things turn out even better that way.
Brie, Red Onion, and Mango Pizza Recipe
Brie, Red Onion, and Mango Pizza
A sweet and savory crunchy pizza combination.
Ingredients
- (amounts are approximates—adjust all ingredient amounts to preference)
- 1 whole flour tortilla (or pizza crust)
- 2-3 tablespoons pizza sauce
- 1-2 ounces of brie, cut or pulled apart
- 1/4 mango, cut into chunks or slices
- 1/4 small red onion, thinly sliced
- a few pinches of freshly ground black pepper
Instructions
- Preheat oven or grill to 400-degrees F.
- Spread pizza sauce evenly over tortilla. Top with brie, mango and onion. Sprinkle with black pepper.
- Bake directly on oven rack or grill until crispy and beginning to brown (about 8-10 minutes). Watch closely to avoid burning.
- If using pizza crust, or your own pizza dough, adjust bake temperatures and times accordingly
Fruity pizza’s are my FAVORITE! Especially ones with Brie! Holy YUM!
