Almond Joy Pie
Make with shredded coconut, almonds, and chocolate chips this pie is simple and easy to make ahead and rewarm. Try it topped with ice cream, chocolate syrup, and toasted nuts for an over the top splurge.
  • 2 eggs, beaten
  • 1 cup brown sugar
  • 8 tablespoons butter, softened
  • 1 tablespoons vanilla
  • ¼ teaspoon salt
  • ¾ cup shredded sweetened coconut
  • ¾ cup sliced almonds
  • 1 cup semi-sweet chocolate chips
  • ½ cup all-purpose flour
  • 1 (9-inch) pie crust, unbaked
  1. Preheat oven to 350°F.
  2. In a large bowl combine eggs, sugar, butter, vanilla, and salt until well blended.
  3. Stir in coconut, almonds and chocolate chips until combined.
  4. Add in flour and stir until just combined.
  5. Pour into unbaked 9-inch pie crust, and bake in 350°F oven for 30 minutes.
