Of course, these peanut butter cookies are fine all by themselves with a big glass of milk, but it sure is fun to make special treats from time to time too.
Once again the holidays flew by without getting around to everything on my baking list. So, over the past couple of weeks, the baking bug has hit and I’ve done a little catching up on making a few old favorites as well as trying some new treats too. Last week after making Peanut Butter Butterfinger Ice Cream, I made a few fun ice cream sandwiches for my kids. They’re teenagers, so not technically kids, I suppose, but they sure did grab them up like a bunch of happy-go-lucky kids. For the slightest moment, the angst filled teenager disappeared as they delighted in the ice cream sandwiches. And who wouldn’t? Kids of all ages will go for these.
Oh my … this … this Peanut Butter Butterfinger Ice Cream … oh my. It’s darn good. It just is. I don’t have a lot of fluffy things to say about it, except it is kind of fluffy—very mousse-like. And it’s decadent so it doesn’t take much to satisfy that sweet tooth. So if you’re a Butterfinger fan like I am, you’ll be a very happy camper.
