For the past few weeks I’ve been happy to be working with the National Frozen & Refrigerated Foods Association (NFRA) to create easy snacks that are beyond cool, like sweet Lemon Cream Pie Dip Recipe and easy Cheesy Mozzarella Bites, both simple but tasty recipes, and both made with delicious ingredients found in the refrigerated food aisle. Today I’m sharing a crunchy and quick snack, Cucumber Boats with Easy Greek Yogurt Dip Recipe. I’m not quite sure if these greek-inspired Cucumber Boats could make it across the Mediterranean Sea, but they sure are the tastiest boats I have ever enjoyed.

A zesty Greek Yogurt Dip sits atop cucumber boats to create a crunchy and tangy snack. It’s light and healthy too, which makes this the best combination for a summer snack in my book.

Plus this no-cook recipe is quick and easy. Super quick! And you probably already have all of the ingredients in your refrigerator and spice drawer to make this crunchy snack. Make a batch of the Greek Yogurt Dip and keep refrigerated for a last minute snack, prepare ahead for that party coming up in a few days, or if you’re planning a picnic, tow these boats along.

Cucumber Boats with Easy Greek Yogurt Dip Recipe
 
A simple satisfying and healthy snack or appetizer.

Serves: Makes about 1 cup.
Ingredients
  • 7 ounces plain greek yogurt
  • 2 teaspoons rice wine vinegar
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • cucumbers
  • Optional: toasted sesame seeds
Instructions
  1. Mix greek yogurt, vinegar, garlic powder, salt, and pepper together until smooth.
  2. Serve with cucumbers. For a fun serving option, peel cucumbers and slice lengthwise. Using a spoon, core (remove seeds) and fill with yogurt mixture.
  3. Optional: Sprinkle tops with toasted sesame seeds.
  4. Refrigerate until ready to serve.
