These Easy Chocolate Cherry Coconut Dessert Nachos are quick and sneaky good.

Taking a recipe and mixing it up to make a healthier version is certainly a great goal. That’s why when the nice folks from Udi’s contacted me about working with them and their Hackathon Challenge, I was all about it. Adding your touch to a recipe standard, a family favorite, or maybe something you’ve enjoyed from a restaurant menu, to not only make it healthy, but make it uniquely yours too, is always fun.

What is the Hackathon Challenge?

Participants will be challenged to create their own unique “food hack” using a select list of categories and ingredients. One grand prize winner will receive a cash award, three second-place winners will receive Udi’s products.

How I answered the Hackathon Challenge:

I was happy to see coconut and chocolate chips on the list. Two of my favorites! They are such a wonderful flavor duo. To choose a third that would compliment the nutty coconut and bittersweet chocolate wasn’t all that difficult. I decided on a nut butter, almond butter to be exact to act as the glue between the two, plus cherry which is such a friendly flavor with both coconut, chocolate and almond. Once I nailed down a flavor profile, I decided on trying a super easy approach to nachos using Udi’s Simply Sea Salt Ancient Grain Crisps. To me a hack should be quick and easy, and quick and easy doesn’t get any quicker or easier than with this dessert version of nachos.

We have groups of teens and other friends over on a regular basis and keeping stocked up with good last-minute snacks isn’t always the easiest. I usually always keep a bag of chips, and salsa, plus popcorn on hand, but sometimes it’s fun to mix things up. So nachos, with a bit of a dessert-ish twist, made perfect sense. Although I should say they really are wonderful for a snack or an appetizer too (or in my case as of yesterday, lunch), because they are not too sweet at all. Of course, you can easily sweeten them up by drizzling more melted chocolate over top.

All of the ingredients for these Dessert Nachos can be kept stocked up ready for a quick toasting of coconut and melting of chocolate. These are packed with flavor and texture, and can be prepped and ready to serve in under 10 minutes. And when you have a herd of hungry teens heading through the door, time is of the essence.

These nachos were sneaky good. As I said, not too sweet, crunchy, nutty — all the things that make for the perfect quick snack or dessert. Enjoy!

Chocolate Cherry Coconut Dessert Nachos

An easy and quick dessert or snack full of flavor and crunch.

Ingredients

  • 4.9 ounce bag of Udi’s Simply Sea Salt Ancient Grain Crisps
  • 1/3 cup almond butter
  • 2/3 cup coconut flakes, lightly toasted
  • 1/3 cup dried cherries
  • 1/3 cup chocolate chips, melted (or more if you like chocolate)

Instructions

  1. Arrange Udi’s Simply Sea Salt Ancient Grain Crisps on a platter. Drizzle and sprinkle remaining ingredients as you like and serve!
