Easy Ice Cream Sandwiches

I scream, you scream, we all scream for Ice Cream Sandwiches!

Ahem.

Last week after making Peanut Butter Butterfinger Ice Cream, I made a few fun ice cream sandwiches for my kids. They’re teenagers, so not technically kids, I suppose, but they sure did grab them up like a bunch of happy-go-lucky kids. For the slightest moment, the angst filled teenager disappeared as they delighted in the ice cream sandwiches. And who wouldn’t? Kids of all ages will go for these.

Plus (I know I say this a lot), these are super duper simple. Place a scoop of ice cream between two of your favorite cookies, add some of your favorite candies, chopped nuts, or sprinkles, and that’s it. Freeze for a bit to firm the ice cream back up, unless the kids can’t wait.

Of course you could whip up a batch of homemade cookies, but I cheated. While stopping in at the Dollar General for Butterfingers for the Peanut Butter Butterfinger Ice Cream recipe, I saw these packs of perfectly shaped soft cookies on the cheap. I mean waaay cheap. Like maybe $1.00?

I lost my mind a bit and bought three different kinds for ice cream sandwich fixings: chocolate, chocolate chip, and snickerdoodle. Perfect homes for Peanut Butter Butterfinger and Vanilla Ice Creams, I thought. Peanut Butter Butterfinger Ice Cream sandwiched between a chocolate cookie, with more crushed Butterfingers added?

Whoa, Nellie.

I wasn’t sure how they’d turn out. I mean $1.00? How good could they be? But they were. A little soft and chewy, without being crumbly, they made the perfect cookie for gently mashing down the ice cream. Seriously, if you have the Dollar General around your parts, find these cookies, and make you some Ice Cream Sandwiches. That’s an order!

Ice Cream Sandwiches Recipe

Easy Ice Cream Sandwiches

Ice Cream Sandwiches

Yield: 6

Easy homemade ice cream sandwiches are a hit for parties or a special day.

Ingredients

  • 6 scoops of your favorite ice cream
  • 1 dozen cookies (approximately 2-3 inches in diameter, if using another size, adjust ice cream amounts accordingly)
  • assortment of additions: sprinkles, nuts, crushed candy/candy bars, mini chocolate chips (get creative!)

Instructions

  1. Place a scoop of ice cream between two cookies. Gently press together. Smooth any ice cream that squeezes out.
  2. Sprinkle additions on exposed ice cream all the way around the sandwich.
  3. If not eating right away, place on baking sheet, cover with wax paper or wrap individually, and place in freezer until ice cream firms back up, or until ready to serve.
